Ajab Singh Rawat ("Gypsy")


Ajab Singh Rawat, A Chef par excellence, the man on whom lays the onus of making the name of Indian cuisine synonymous with delectable North Indian flavours, is the founder of Roti-Boti. Ajab Singh Rawat has spent 35 years in the exacting kitchens of Sheraton, Oberoi, Le Meridian and other five star hotels all around the world.

He has opened Roti Boti in 1995. Here he has recreated authentic regional dishes and has introduced new classics to be enjoyed in a warm, sumptuous setting. Many of his innovations have become classics now.


The following outline some of his achievements:

  • The Age Good Food Guide Award Winning Chef for 1992, 1993 and 1994.
  • Gold,Silver and Bronze medal Winner at the National Culinary Exhibition in New Delhi on 1990.
  • In their Jan/Feb 2006 edition, Rave*SQ, a prominent North American & India based lifestyle magazine, has chosen Roti Boti amongst top 44 Indian Restaurants in the world. Singh is ably assisted by two internationally qualified chefs.
